Buttermilk Pancakes
2 cups flour
1 teaspoon salt
1 ½ teaspoon baking soda
¾ teaspoon baking powder
2 cups buttermilk
2 eggs
¼ cup melted butter
Mix all the dry ingredients together, then add the wet ingredients. Stir lightly until just moistened, mixture will be thick and lumpy. Drop by spoonfuls onto lightly greased griddle, spreading batter with spoon. Turn cakes as soon as browned and cook underside until browned. Makes five to six servings.
