Family Favorite Oatmeal Cookies

Family Favorite Oatmeal Cookies

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups flour
1 teaspoon baking soda
1 teaspoon salt (optional)
3 cups quick or old-fashioned oats (rolled oats)
1 cup chopped walnuts, optional
1 cup raisins, optional

Preheat oven to 350 degrees F. Grease cookie sheet. Beat shortening and sugars until light in color and creamy. Add eggs and vanilla extract, mix well. Stir in oats, nuts, and raisins. Using rounded tablespoons, roll into balls. Place 2 inches apart on the prepared cookie sheet. Flatten with a fork. Bake for 10 to 12 minutes or until lightly browned. Let stand for one minutes before removing to racks to cool. Makes 5 dozen.
