Icelandic Crepes
One of the kind of fun things about my job is that I meet people from all over. I got into the habit of having a party when someone graduated the program and there was a man from Iceland who brought these fantastic crepes. I have yet to duplicate them like I had them, even with the recipe! Maybe it takes a more skilled hand.
2 c. flour
2 eggs
2 TBS sugar
1 tsp baking powder
2 TBS vanilla extract
½ stick margarine
Whole milk as needed—until thin. (I tried to get him to be more specific than this but he said that the weather and humidity changes and you may need more or less. He said to the thinness of a typical crepe batter)
Mix: Flour, eggs, sugar, baking powder, vanilla and milk by hand with a whisk. Melt margarine in a pan (the same one you’ll cook them in) and add to batter. Mix batter thin with mix (adjust consistency after preliminary milk deposit). Cook in skillet on each side until golden brown.
