Sis. Vogy’s Ice Cream Sandwiches

1 egg
1 package of cake mix (devil’s food or yellow)
½ cup shortening
¼ cup butter or margarine softened
1 teaspoon vanilla extract
½ a gallon of brick ice cream

Heat oven to 375 degrees F. Beat egg, shortening, butter, vanilla, and about HALF the dry cake mix until smooth. Stir in the remaining cake mix and divide batter into four parts. Roll each part into a rectangle of 10 inches by 6 inches on a lightly floured board. Roll with a floured rolling pin, then cut into 3 inches by 2 ½ inches rectangles. Place rectangles on an UNGREASED baking sheet. Bake for 6 to 8 minutes or until the edges look set. (Note: the centers may look puffy.) Prick the surfaces with a fork and allow to cool. Cut the ice cream in half length-wise, then cut ¾ inch slices from it. Place the ice cream slice between 2 cookies and GENTLY press together. Wrap in plastic wrap and freeze for 24 to 36 hours. This allows the sandwiches to become soft. One batch makes about 12 to 16 sandwiches.
