Hot Kabocha Salad
Quarter half of a Kabocha squash (the size of a cantaloupe). Remove rind. Bake in a lidded pyrex for 5-6 minutes in the microwave. Thinly slice squash into crescent shape and lay flat in a casserole, single layer.

Mix together:
1/4 medium yellow onion, minced
5 TBS. Mayonnaise
1 TBS. soy sauce
3-4 TBS. soy milk or milk

Pour over squash and bake in 350 degree oven for 10 minutes.
