Tatsuta Age (Japanese style fried chicken)
1 1/2 lb. deboned chicken thighs, cut into bite-sized pieces

For 30 minutes, marinate in:
3 TBS. soy sauce
1 tsp. mirin
1 TBS. sake
1 tsp. ginger juice (grind then squeeze out juice)

Remove from liquid, pat dry with paper towel. Dredge in cornstarch or potato starch. Prepare vegetable oil at 350 degrees F. Deep fry for 4 minutes. Drain on paper towels. Serve with fresh lemon wedges.
