Olsen Waffles

I will admit, I usually just go for the boxed mix, but I feel like that's cheating and can't in good homemaker confidence make boxed waffles for company. Call it 4-H pride, but short cuts are not my fav when cooking for company. That being said, I've tried several waffle recipes and haven't really loved any of them They're not fluffy enough or crispy enough when they come out. I'm hoping this one will do it for me... I just need some breakfast company to try it out ;)

Olsen Waffles
2 eggs
2 c. buttermilk
2 c. flour
2 TBS. sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 c. plus 2 TBS oil

Beat eggs and add all other ingredients, mixing well. Pour onto hot waffle iron. Cook and enjoy.
