Blintyes

Blintyes

3 eggs
1 cup milk
½ teaspoon salt
2 tablespoons salad oil
¾ cup unsifted flour

Beat together the wet ingredients, then add flour (this will be a thin batter). On a lightly greased griddle, drop batter like you would for pancakes, except push the batter out to make thin, big circles. Don’t dry out, or cook too long.

Apple Filling:

3 tablespoons water
2 cups finely chopped apple
1 tablespoons flour
1/3 cup sugar
½ teaspoon cinnamon
1 teaspoon lemon juice

Beat together for 5 minutes. Fill in the blintyes (about two tablespoons), then fold in half, then half again, so you end up with a triangle. Serve with whipping cream.
