Olsen Wheat Bread

Wheat Bread

Recipe yields 4-6 loaves bread.

5 c. warm water
7 c. flour (5 c. wheat 2 c. white)
2/3 c. oil
2/3 c. honey
2 TBS salt
1/2 c. warm water plus 2TBS yeast (dissolve)
Additional flour for kneading (white)

Combine first 6 ingredients and mix well. Add additional flour until a soft but firm dough forms. You will add quite a lot of flour so don't be surprised if it seems to take a lot. If you are kneading by hand, this will take about 10 min. The dough should not be sticky. Turn into a large greased bowl and let raise about 1 hr. Punch down and separate dough into the number of loaves you want. Place in greased bread pans and let raise again for about 40min. Bake at 350 degrees for approximately 20 minutes, longer if tops are not brown. Turn out of pans on a kitchen towel and lightly brush tops with butter.
